Healthy oat cookies

Ingredients:

  • 130 g all-purpose flour (spooned into the measuring cup, then leveled)
  • ½ teaspoon baking soda
  • ½ teaspoon baking powder
  • ½ teaspoon sea salt
  • ½ teaspoon ground cinnamon
  • 120 ml coconut oil or 115 g butter, melted
  • 150 g brown sugar, lightly packed
  • 1 large egg
  • 1 large egg yolk
  • 2 teaspoons vanilla extract
  • 135 g large-flake (traditional) rolled oats
  • 110 g raisins
  • 60 g coarsely chopped walnuts (optional)

Preparation:

  • Preheat the oven to 180 degrees Celsius, and line two baking sheets with parchment paper.
  • In a large bowl, mix together the flour, baking soda, baking powder, salt, and cinnamon. In another bowl, whisk together the melted coconut oil, the sugar, the whole egg, the egg yolk, and the vanilla.
  • Add the wet ingredients to the dry ingredients and mix until a uniform dough forms. Then fold in the oats, the raisins, and the walnuts (if using), and work it into a thick mixture. Let the dough rest for 20 minutes while the oven heats up.
  • If the dough is too soft and cannot be shaped, place it in the fridge during these 20 minutes so it firms up a bit. If it seems very crumbly, add up to 3 tablespoons of water.
  • Using a spoon, form 20 balls of dough, each about the size of a tablespoon. Place the balls onto the parchment-lined baking sheets, leaving space between them, since they will spread into flat cookies.
  • Bake them for only 10 minutes, until they rise slightly, turn golden brown, and still look a bit “raw” in the center. Let them cool on the baking sheet for 5 minutes, then transfer them to a rack to cool completely.
